Making kulikuli is a straightforward process, but it requires some patience and attention to detail. Here’s a basic recipe for making homemade kulikuli:

Ingredients:

  • 2 cups of raw peanuts (groundnuts)
  • 1 teaspoon of salt (adjust to taste)
  • 1/2 teaspoon of cayenne pepper or chili powder (adjust to taste, optional)
  • 1 teaspoon of ground ginger (optional)
  • 1 clove of garlic, minced (optional)
  • Vegetable oil for frying

Instructions:

Roasting the Peanuts:

Preheat your oven to 350°F (175°C).

Spread the raw peanuts on a baking sheet in a single layer.

Roast the peanuts in the preheated oven for about 10-15 minutes until they are lightly golden brown. Keep an eye on them to prevent burning.

Removing the Peanuts’ Skins:

Once the peanuts are roasted, remove them from the oven and let them cool slightly.

Rub the peanuts between your hands or in a clean kitchen towel to remove the skins. You can also use a colander or sieve to separate the skins from the nuts.

Grinding the Peanuts:

Place the roasted and skinned peanuts in a food processor or blender. You can also use a mortar and pestle.

Grind the peanuts until you get a smooth peanut paste. You may need to scrape down the sides of the processor to ensure even grinding.

Seasoning the Peanut Paste:

Transfer the ground peanut paste to a mixing bowl.

Add the salt, cayenne pepper or chili powder (if using), ground ginger (if using), and minced garlic (if using) to the peanut paste.

Mix the seasonings thoroughly into the peanut paste until well combined.

Shaping the Kulikuli:

Take small portions of the seasoned peanut paste and shape them into small balls, sticks, or patties. You can use your hands or molds for shaping.

Frying the Kulikuli:

Heat vegetable oil in a deep frying pan or pot over medium-high heat.

Once the oil is hot, carefully add the shaped kulikuli pieces in batches, making sure not to overcrowd the pan.

Fry the kulikuli until they are golden brown and crispy, turning them occasionally to ensure even frying.

Remove the fried kulikuli using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Cooling and Storage:

Allow the fried kulikuli to cool completely before storing them in an airtight container. They will continue to harden as they cool.

Your homemade kulikuli is now ready to enjoy! It’s a delightful snack with a savory, nutty flavor and a satisfying crunch. Adjust the seasonings to your taste preferences, and feel free to experiment with different shapes and sizes.
